Steps
- Preheat oven to 230°F.
- Blend the gingerbread cookies until you get a fine powder.
- Pour the milk and cream into a saucepan, bring to the boil then add the gingerbread powder while stirring.
- In a bowl, whisk the eggs with the sugar and vanilla. Gradually add the mixture while stirring. Cook the cream in a bain-marie over low heat for about 45 minutes.
