Steps
- Preparing the cakes
- Preheat oven to 350°F.
- Place paper liners in muffin pans.
- Whisk together flour, baking powder, baking soda and salt in a bowl.
- In a standard mixer, beat butter and sugar on high until pale.
- While continuing to whisk, add the vanilla paste. Add the eggs, one at a time, until well incorporated.
- On low, add the buttermilk. Then add the flour mixture in three batches, until just beginning to be fully incorporated.
- Fill the molds approximately 2/3 full.
- Bake for about 9 minutes, then rotate pans and bake for 9 to 11 minutes more, or until a cake tester comes out clean. Let cool to room temperature before frosting.
- Preparing the icing
- In a standard mixer, add the goat cheese, cream cheese and butter and beat on high speed until light and fluffy.
- Add the vanilla paste, salt and powdered sugar.
- Mix until all ingredients are well incorporated.
- Frost the cupcakes once cooled to room temperature and garnish with Bonne Maman Lemon Cream on top.
