Goat Cheese and Bonne Maman Lemon Cream Cupcakes

Lemon Cream

For the cupcakes

  • 3 ¼ cups cake flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 ¼ tsp salt
  • 6 oz butter, softened
  • 1 ½ cups sugar
  • 2 tsp vanilla paste
  • 3 eggs 1 ½ cups buttermilk

For the icing

  • 8 oz goat cheese, softened
  • 8 oz cream cheese, softened
  • 1 ½ cups powdered sugar
  • 2 tbsp butter, softened
  • 1 tsp vanilla paste
  • 1 tsp salt

Steps
  1. Preparing the cakes
  2. Preheat oven to 350°F.
  3. Place paper liners in muffin pans.
  4. Whisk together flour, baking powder, baking soda and salt in a bowl.
  5. In a standard mixer, beat butter and sugar on high until pale.
  6. While continuing to whisk, add the vanilla paste. Add the eggs, one at a time, until well incorporated.
  7. On low, add the buttermilk. Then add the flour mixture in three batches, until just beginning to be fully incorporated.
  8. Fill the molds approximately 2/3 full.
  9. Bake for about 9 minutes, then rotate pans and bake for 9 to 11 minutes more, or until a cake tester comes out clean. Let cool to room temperature before frosting.
  10. Preparing the icing
  11. In a standard mixer, add the goat cheese, cream cheese and butter and beat on high speed until light and fluffy.
  12. Add the vanilla paste, salt and powdered sugar.
  13. Mix until all ingredients are well incorporated.
  14. Frost the cupcakes once cooled to room temperature and garnish with Bonne Maman Lemon Cream on top.
