Strawberry Jam

  • 400gr flour
  • 100gr whole hazelnut powder
  • 70gr sugar (brown)
  • 3 teaspoons speculo spice (Bonne Maman)
  • 2 pinches salt
  • 250gr butter, at room temperature
  • 70gr water
  • 1 jar Bonne Maman Strawberry Jam
  • 1 egg yolk
Steps
  1. Mix together the dry ingredients: flour, sugar, hazelnut powder, spices and salt.
    Then add the butter in small pieces. Crumble the mixture well with your fingertips,
    then add the water.
  2. Form a ball. Leave to rest in the fridge for at least 30min.
  3. Cut the pie dough in half, 1/3 on one side and 2/3 on the other. Roll out both
    doughs with a rolling pin. Shape the larger dough into a tart tin. Prick the base of the
    pastry with a fork and place the jar of Bonne Maman strawberry jam on top.
  4. Cut the second pastry into 1cm strips. Form the grid as shown in the video.
    Working from top to bottom, until you get the desired effect.
  5. Brush with egg yolk.
  6. In a hot oven, bake for 40min at 180°C. Then leave to cool
