Hazelnut and Cocoa Spread

  • 3 stainless steel circles, 7cm diameter
Steps
  1. Separate the egg whites from the yolks in a mixing bowl. Add 25g sugar and whiten the mixture.
  2. Add the milk and flour, and mix until smooth.
  3. Whip the egg whites into a meringue. To do this, beat them with an electric whisk. As soon as the egg whites are frothy, add 25g sugar and continue beating until stiff.
  4. Bonne Maman's tips

    Your meringue is ready as soon as it forms a bell-shaped point when you remove the beaters.

  5. Gently fold your meringue into the remaining batter.
  6. Heat a non-stick frying pan over low heat. Generously butter or oil the inside of your stainless steel circles and place them in your hot pan. You can also grease the bottom of the pan to ensure the pancakes don't stick. Fill the circles halfway with pancake batter.
  7. Pour 3 large tablespoons of water around the circles and cover your pancakes to steam for 12 minutes. Do not remove the lid before this time, as it may cause your pancakes to fall over. 
  8. Before serving, for extra indulgence, spread your pancakes with Bonne Maman Hazelnut and Cocoa Spread.
